The muffin band wagon...and Weigh in!

So I have been seeing everyone post about these delicious looking egg muffins for the past year or so but I have always been too nervous to try them. Mainly because they are one of those make ahead recipes and I have never re heated cooked eggs before. So of course I fear change and never tried them. Well today I bit the bullet and made some and I'm happy to say they were amazing!

How I did it:

8 eggs

lots of chopped veggies (I just used what I had red pepper, sunburst tomatoes and fresh green beans)

Jimmy Dean's pre cooked crumbled turkey sausage (chopped ham or even chicken would be super yummy too)

1/3 cup shredded cheese

 

I sprayed my muffin tin and then put a little bit of the shredded cheese in each one. I then beat all the eggs and added the veggies and meat in.

I used a ladle poured the mixture into the muffin tin and it overfilled 10 cups (see picture below).

I popped them into a 350 degree oven and baked for about 20 minutes.

 

Haha they are beautiful right??? Nope...but they were delish! And they are only 81 calories each according to MFP (I don't count the veggie calories).

Another yummy muffin recipe I'm going to try is this one from Emily Bites. It looks so yummy I love bananas and chocolate so you can't lose with this one!

FINALLY, I weighed in this morning. I was so freakin nervous to but I bit the bullet and did it. I cheated a few times this past week or forgot to record calories some days. But the past few days I have been doing well again. Anyways I lost 1.1 lbs putting my total weight loss to 33 lbs since having baby Jack! Since Jack got his shots this week I will start taking him to the day care 3 days a week for about an hour and a half so I can run. It will be good for him and Hunter will love playing with his friends again. Plus this mommy needs some major me time!

Baby Weight Loss Update

It's Friday which means nothing for me because I'm a Mom! But I am linking up with Darci from The Good Life Blog for Five on Friday yee freakin haw!

 

I'm going to do all five about my new healthy adventure!

1. Numbers

As of Tuesday the 17th I had lost 5 lbs in a WEEK. Heck yeah! My real life friend Cait and I started texting pictures to each other of EVERYTHING we eat to stay accountable. Both of us are doing awesome she's lost about 6 lbs. We are just counting calories. Since I'm exclusively breast feeding I give myself 1700-1800 calories a day. I feel like I'm eating alot but I do not want my supply to tank.

 

2. Food

I have been realllllyyy trying to make healthy and mostly cleaner food choices lately. I am getting used to it. Top left is a salad with feta, apples, snap peas and grape tomatoes with Balsalmic vinegar. Next is a chocolate shakeology protein shake (my go to lunch) bottom left is a green bean, chicken, tomato egg and egg white omelet on a whole wheat wrap and then its a turkey and egg omelet on a whole wheat wrap (both of those are dinners).

3. Working Out

First of all I got an awesome workout program T-25. Its only 25 minutes...easy to find the time right? Well not for me! I've been struggling with doing it every day. But I make sure to get it in every other and do walks with the munchkins on the days I don't. It's really hard to find any time as a new Mom! :/ I know weight loss is 90% what you eat so I'm really focusing on that right now.

4. Temptation

I love sweets. Hunter and I "made" these sugar cookies today and I ate two of them. Luckily they were only 60 cals a pop...I didn't want to look at the amount of sugar though...womp womp womp! FAIL.

5. Cuteness: Bath time edition!

Ok I know I said this would be all about weight loss but I can't help but put pictures up of my boys!

That Feeling...

You know that feeling when you DON'T feel um how do I say this "fat" or "bloated?" Well thats how I've felt the past week since I've been eating healthiER and working out. My face doesn't feel bloated and I just feel better about myself. I highly doubt any of my work is showing yet but just knowing I'm leading a healthier lifestyle has this mama feeling dang good.

Now Friday was a rough day. Little Jack was fussy and didn't want to be put down he just wanted to nurse then cat nap OVER and OVER and OVER again. I tried to do my T25 workout THREE separate times and finally it was time to get ready for a birthday party that evening so I had to call it a day. I felt defeated, but then I thought to myself "hey you've worked out and ate healthy the past three days you're doing great, don't get pissed off quite yet." Well then I went to the party and ate some cake..shit. But today I still feel great. I'm not going to deprive myself of everything...I'm not going to have cake at my house...but at a party I will have a piece.

I got back into my workouts and felt better. With a newborn some days are just not going to work to work out. He is more important. Most days will work great but on those fussy days I will try but not get mad if it doesn't work.

 

 

 

Being a mom of two is tough cookies but I love my boys. They are my first priority but I can always find ways to squeeze my workout in on most days. Thats part of keeping that feeling, finding ways to fit in your workout at least MOST of the time. Plus eating healthy. And on days I miss my workout I better make damn sure I don't shove cake in my mouth. :)

Back on the Saddle

It feels so good to be working out and eating healthy again. This week I started Shaun T's T25 workout program and it is insane! I hate it and love it at the same time. This week and next week I'm doing the modified versions of most things and then after that I'm full on. But even with doing the modifications it is really hard! I am SO sweaty afterwards. Luckily its only 25 minutes so I have plenty of time to shower after I do it while the boys are napping.

I've also done really well with my eating the past two days. I am going to lose at LEAST 4% for Skinny Meg's diet bet this month but I'm going to raise my goal to 10 lbs by October 1st I should be able to do it with the combination of eating healthy, working out and breast feeding.

Mel got me on the 30 day plank challenge band wagon...and let me tell ya just holding it for 20 seconds was hard for me...ughhhh I hate being out of shape. BUT that is changing by the end of this month I will be a whole new woman. I mean I will have a long way to go but it will be a great start!

Goals for September:

  • Lose at LEAST 4% for SM's diet bet...but hoping to lose more than that (10lbs).
  • Continue with T25 this month and next.
  • Finish that tortorous plank challenge.
  • Keep eating healthy (planning meals etc)...

A Few Things...and a diet bet!

Since I have been posting so much about baby I decided to change things up and finally post about health and fitness.

 

1. Diet Bet....What what?!?!

I am joining in on Skinny Meg's diet bet! YOU should too! It's a 25.00 buy in and theres like 10,000 PLUS in the pot already. ALL you have to do to win a chunk of that dough is lose 4% of your body weight in 4 weeks!

2. Couch to 5k!

Last August I started C25K which seriously helped me lose weight big time. I am happy to say I started again this week! It feels SO good.

3. Jamie Eason's Turkey Muffins

This recipe is so good! It makes 12 turkey meatloaf muffins. I made them last week and they turned out great. You can freeze them in two's and then nuke them for a healthy lunch! Making them again this week.

4. Meal Prep Sunday

I am starting meal prep this Sunday. I'm making the turkey muffins (above), cutting up my veggies, cooking chicken for wraps and salads and making some brown rice. I am going to lose at least 4% during this diet bet.

5. I am also going to start weighing in weekly again and posting about it yay!

6. At the end of the diet bet I will post before/after pictures. yee haawww!

7. My workouts for September will consist of Couch25k and Shaun T's new T25 workout from beachbody!

8. Oh...I am kind of pissed that it's September and Summer is almost over! :(

One Month Old!

I cannot believe my baby boy turned one month on Tuesday. I feel like we were heading to the hospital to have him like 4 days ago. Time flies when you don't get sleep right?? Nah its not bad at all in fact I'm truly enjoying every minute of his newborn stage. You never know what life is going to bring and if this is my last baby I am savoring every sleep deprived moment.

 

Jack has brought us so much joy this past month. He is fitting right into our family. The funniest thing about him are how wide/big his eyes are when he is awake. He looks startled all the time haha! It's so cute!

He has given us a few half smiles while awake and those cute gas grins while he sleeps. I am so excited to see his first official smile which should be in the next few weeks! He still sleeps quite a bit. His awake periods are probably for about 45 min to an hour which includes his eating time. He is still breastfeeding great. However, I am pumping more and giving bottles every other feeding because if not he is attached to my boob all day, and I need to be able to give Hunter attention too ;) At night he wakes up 2 times still i'm hoping he drops the second feeding soon! His personality is much more calm then his brothers which I am very glad about! I'm sure he will get more feisty as time goes on though...it's in his blood! ;)

Jack is a whopping 9 lbs 9 oz, that is 1 oz more than his brother weighed at birth! He is wearing newborn sized clothes and a few 0 to 3 month outfits but they are still pretty loose. He is in size one diapers. We're really not sure what his eye color is going to be sometimes they look dark brownish other times slate blue. So we will see!

We love our little Jack with all our heart! Even big brother is happy keeping him around!

Model Material...

So when my little guy was 9 days old we had newborn pictures done. I just got the CD back last week and they are A-FREAKIN-DORABLE but yeah I'm a little biased. Here are some of my favorites..

 

 

 

 

 

He did so good! Hunter came with us at the beginning to get a few shots and then him and Dad had a fun afternoon together. Jack and I had a blast (not...) I got peed on right at the beginning and my clothes were soaked. Plus she keeps it warm for newborn shoots (it was like 85 degrees in the house) so I was dripping with sweat and urine...fun times. But it was all worth it. She is an amazing photographer...the photos speak for themselves!

I'm starting to get used to less sleep than usual. He is still waking up twice at night. Goes to bed at 8:30 wakes up around 2:30 wakes up again around 5:00 am and then sleeps another few hours. I can't wait until he drops that 5 am wake up! I started pumping and giving him bottles for his night feedings. It takes me about 20 minutes to feed him vs the one and a half hours it was taking me before! Score!

I'm going to be posting about my favorite newborn and new mom items later this week! SO exciting I know!

So Far...

So good. I LOVE being a Mommy of two. Yes its hard. Yes its tiring. But there is really no place I'd rather be than with my two boys. It's funny I wanted a girl so bad this time around but now that I have my little Jack I am so in love I couldn't imagine my life without him.

Things are so different this time around. I have no signs of Post Partum depression or even the baby blues. I sometimes feel guilty because I had PPD with Hunter but not with Jack. I know I couldn't help it, but it makes me sad I didn't enjoy his first few months of life like I am now. I know he will never know the difference. He has always been given the best care and most importantly loved more than anything, but I still regret not enjoying the newborn stage with him more. It goes so fast and if this is my last baby I want to enjoy it more than anything.

Last post I wrote how I was worried about being home with two. While it's difficult and frustrating taking care of a newborn with a fiesty two year old it is getting better every day. As long as Hunter gets his time with me he is pretty well behaved. And as long as I get my time with him I am a happy Mama. We are kind of getting a routine, but its hard to get a newborn on a schedule. So I'm just rolling with the punches. Hunter has school Monday, Wednesday and Friday from 9:30 to 12:00. Today we didn't get there until 10:00 but I call it a success.

Baby Jack goes to bed around 8:30 wakes up around 2 am to nurse (usually takes an hour he is a SLOW eater and eats A LOT), and then again between 6 and 7. He still sleeps a ton during the day. He is having a LITTLE more awake time and I love it. His eyes are so bright and wide open during it and he is just peaceful and calm and looks around. I can't believe he will be 3 weeks old on Saturday. He is still wearing newborn size clothes and diapers. Last appointment he was 7 lbs 8 oz (5 oz over birth weight,) so I'm thinking he is close to 8 lbs by now.

From One to Two

Wow life is so much busier with two little munchkins! All you Mom's of two + I have even more respect for you. While I know one kiddo is challenging, two is MUCH harder. Now don't get me wrong I'm loving life right now. My little guys are both such lovers and pretty easy, but I am going to have to get used to this whole out numbered thing!

Today is my first day alone with the two kiddos. So far it is going great. I got probably 5 hours of sleep last night so not too bad. Baby JACK (yes I forgot to share his name in the last post) is going through a growth spurt and nursing every 3 hours at night. Before he was going 4 to 5 hours at night, but I'm not going to complain he is such an easy baby. I'm proud of myself for making it through the first two weeks of breast feeding (the hardest part) Jack is doing great with it so we are not giving up. Next week I'm going to let the hubs give him a bottle of breast milk for the first time. It will be nice to be able to get a break once in a while.

In other news I'm still wearing maternity pants. Bahhhh.. I hate it. I think I would fit into my pants I had before I lost weight last year so I should try digging those out. If thats not good motivation to lose this weight I don't know what is. I also started logging in my fitness pal today. I have it set for 1800 calories since I'm nursing. I will see if thats enough and adjust it as necessary. I'm still too nervous to post my numbers on here. I will post before pictures soon I promise I just have been crazy busy lately. As for working out I'm going to start walking more this week. Then I will start my new workout program 3 weeks from now at 5 weeks post partum.

And Baby Makes 4!


Well sorry I have been gone so long (ok just a week) but I kinda sorta really had my baby boy!! He was born July 27, 9 days early. Today's my actual due date and I am so glad I'm not pregnant anymore...

All I can say is I had a MUCH easier labor than last time. He was born like 2 hours after we got to the hospital. I pushed for less than 20 minutes. MUCH better than the three and a half hours of pushing last time. He is also much smaller than Hunter. Hunter was 9 lbs 8 oz this little man was 7 lbs 3 oz 20.5 in long.

 

One week old!

So far I am a lucky mama! I am getting at least 4 hours of sleep at night before he wakes up to nurse (usually I have to wake him) (knock on wood), and he is breast feeding like a champ. He is also very calm. Big brother is doing great as well. He is adjusting and really loves giving his baby bro kisses. It is so freakin adorable. He is a little freaked out by the breast feeding thing though. But he won't remember this I guess haha!

This week I am getting back on the healthy train and eating 5 to 6 smaller protein filled meals a day. Were also going to get out and take walks as a family. I haven't weighed myself since having him. I'm scared. I am going to post some before pictures this week. EEK! I'm freaked!
